My appetite is funny after a workout. Sometimes I crave nothing but a cold smoothie, and other times I want a huge meal. The other night I wanted something filling, but was craving sweet, not savory, and a smoothie wasn’t calling my name. So I decided to make some protein pancakes.
I definitely have a love/hate relationship with these kinds of pancakes. I’ve attempted numerous times to perfect a recipe that comes as close to a pancake with texture and taste as you can get. There have been a handful of fails—sometimes protein powder just doesn’t taste good.
Upon browsing my usual blogs, I came across this recipe. After using SunWarrior for some time now, and actually liking the flavor of the chocolate protein powder, I decided to tweek the recipe slightly and give it a go.
Chocolate Protein Pancakes
Adapted from this recipe
2 scoops protein powder ( I use SunWarrior)
¼ cup egg whites
1 ½ – 2 tbsp ground flax
¼ cup almond milk
Mix all the ingredients and cook over medium heat until bubbles form on top. Flip and finish cooking on the other side. Makes one large pancake or two smaller ones.
I’ve got to say, I was a bit hesitant at first, but when the batter smells good, you know something must be right. These pancakes were great! They weren’t too dry or chalky—which tends to happen when cooking with protein powder—and they tasted like chocolate pancakes! I topped mine with fresh strawberries and some peanut butter. It was the perfect, filling, sweet dinner
