This is my first ever post! It’s so weird to see this blog come to life after much deliberation. I started reading healthy living blogs about two years ago and was immediately sucked into the world of green monsters, half marathons, and Body Pump. After going through some major transformations myself– some more recent than others, I decided this would be the perfect time to start documenting different things going on in my life.
I’m always looking for new and enticing recipes to try that go along with my somewhat strict diet. Due to certain medical conditions, I eat a low protein, vegetarian, gluten and dairy free diet. That may seem overwhelming at first– trust me, I know! It was very difficult in the beginning to find things that fell in this very narrow range. But after eating this way for about two months, I’m starting to get the hang of it.
In my About Me page, you’ll see that I mention the LEAP test I underwent to help diagnose some food sensitivities. It’s a pretty complicated process, so that will be a post in and of itself. It basically explains why I have to eat the way I do. I’m not trying to lose weight. I’ve already been told by my doctors that losing any more weight isn’t an option! At this point, I’m trying to find a healthy balance with my meals and workouts. It’s a work in progress, but I’m getting there :)
So with all of that said, I made some pretty awesome cookies today! I was looking for a protein cookie that I could have pre or post workout. These cookies pack a pretty solid nutritional punch with about 5g of protein each!
Chocolate Peanut Butter Protein Cookies
1 cup rolled oats (I used GF)
1 1/2 scoops chocolate protein powder (Sunwarrior!)
1/2 tsp baking soda
1/2 tsp baking powder
1 small banana, mashed
1/4 cup egg whites
1/3 cup all natural peanut butter
1 tsp vanilla extract
Pre-heat your oven to 350. Mix the wet ingredients in one bowl and dry in another. Combine until everything is well incorporated. Form tablespoon sized balls on an ungreased cookie sheet. Bake for 10-12 minutes.
These were a little on the dry side, but for the purpose I wanted them for, I think they are great! Just as a warning– these aren’t your indulgent, chewy, chocolatey, decadent cookies. These definitely taste like a “healthy cookie”. I’m looking forward to having these during the week before and/or after my workouts!
